Fresh Veggie Recipes for June

June is recognized as Fresh Fruit and Veggie Month and the prime time for garden goodies, so what better way to celebrate the event than with a blog post about recipes that specifically call for gorgeous garden grown goods as main ingredients. My favorite thing in the entire world is cucumbers from the garden or BLTs with beautifully plump garden tomatoes, so much so that my neighbors will bring vegetables from their garden and leave them on my door step. Clearly, I am obsessed!

Okay, I’m getting hungry just sitting here thinking about it. So, I found an amazing article from LittleHouseLiving.com that gives fresh home-grown recipes for just about any vegetable that you can think of. I picked out some of my favorites to share with all of you and as always, just click the image to see the recipe. Enjoy!

  • Fried Green Tomatoes: A treat that you can technically have all year long, but just tastes sooo much better with fresh summer tomatoes.

 

 

 

 

 

 

 

 

 

  • Oven Roasted Parmesan Green Beans: This sounds absolutely delicious! A bit of flare added an already amazing veggie. I bet this would be great with asparagus too!

 

 

 

 

 

 

 

 

 

 

  • Skillet Squash: When I first read the name, I was thinking fried squash (which is my FAVORITE), but this recipe is a mixture of squash, onions, and other yummy vegetables cooked up in the skillet, which I am completely fine with.

 

 

 

 

 

 

 

 

 

 

 

  • Cheesy Cucumber Bites: I am a little skeptical about this one, but definitely willing to try it out. What do you think?

 

 

 

 

 

 

 

 

 

 

  • Olive Oil Oven Baked Potatoes: To quote myself in a previous blog post, there has never been a potato I didn’t like, so yes, definitely loving this recipe!

 

 

 

 

 

 

 

 

 

 

 

  • Fiesta Stuffed Peppers: There is nothing better than stuffed peppers. The freshness and crunch of the pepper mixed with the spicy gooey filling makes for the perfect combination.

 

 

 

 

 

 

 

 

 

 

 

 

  • Rustic Roasted Carrots: Carrots are my second favorite vegetable. Whether raw or cooked, they are so good! I bet this would be the perfect addition to a roast with mashed potatoes (also using garden grown vegetables)!

 

 

 

 

 

 

 

 

 

 

Now to me, all of these recipes sound like little slices of Heaven. I love summertime for many many reasons, but the abundance of fresh garden food is possibly number one.
