The County Fair has come and gone. All the fair food is gone. The corn dogs. The fried Oreos. The candy apples. Did you eat all that you wanted? Did you satisfy your cravings? If not, I have the perfect remedy… you can make your own fair food in the comfort of your own home!!

Funnel Cakes

TOTAL TIME: Prep: 15 min. Cook: 5 min./batch.
MAKES: 8 Cakes

Ingredients:2 eggs
1 cup 2% milk
1 cup water
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
Oil for deep-fat frying
Confectioners’ sugar
 
 
Directions:

  • 1. In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In an electric skillet or deep-fat fryer, heat oil to 375°.
  • 2. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed.
  • 3. Fry 2 minutes on each side or until golden brown. Drain on paper towels. Dust with confectioners’ sugar; serve warm.

Homemade State Fair Corn Dogs

Serves: 16 corn dogs

 

 

 

 

 

 

Ingredients:

2 cups yellow cornmeal
2 cups all-purpose flour
1 teaspoon salt
½ teaspoon pepper
¾ cup white sugar
2 tablespoons honey
2 tablespoons baking powder
2 eggs
2 cups milk
4 cups vegetable oil for frying
2 (16 ounce) packages beef frankfurters
16 wooden skewers

Directions:
  1. In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs, milk and honey. Mix until smooth.
  2. Pour batter into a tall mason jar or large glass; set aside.
  3. Preheat 3 inches of vegetable or peanut oil in a deep heavy-bottom saucepan over medium heat to 350 degrees.
  4. Skewer hot dogs by inserting the sticks halfway up the center of the hot dog.
  5. Using a clean paper towel, blot the excess moisture from the hot dogs to dry them slightly.
  6. Dip the skewered hot dogs into the batter, tilting the glass and rolling the hot dog skewer back and forth to coat completely. Gently place into the hot grease.
  7. Fry 2 or 3 corn dogs at a time until lightly browned, turning occasionally, about 3 minutes. Drain on paper towels.
  8. Serve warm with yellow mustard and ketchup.

Deep Fried Oreos

Ingredients:

2 quarts vegetable oil for frying
1 large egg
1 cup milk
2 teaspoons vegetable oil
1 cup pancake mix
1 (18 ounce) package cream-filled chocolate sandwich cookies (such as Oreo(R))

 

Directions:

  1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. Whisk together the egg, milk, and 2 teaspoons of vegetable oil in a bowl until smooth. Stir in the pancake mix until no dry lumps remain. Dip the cookies into the batter one at a time, and carefully place into the hot frying oil. Fry only 4 or 5 at a time to avoid overcrowding the deep fryer. Cook until the cookies are golden-brown, about 2 minutes. Drain on a paper towel-lined plate before serving.

Caramel, Chocolate and Candy Apples

Ingredients:

Vegetable oil cooking spray
6 small apples, wash and dried, stems removed
2 (9.5-ounce) bags soft caramel, unwrapped
1/4 cup pulp-free orange juice
1 (4-ounce) bar 53 percent cocoa dark chocolate, chopped into 1/2-inch pieces
Assorted small candies, chopped nuts and sprinkles

Special equipment: 6 craft or thick wooden sticks

Directions:

Line a baking sheet with parchment paper and spray it with vegetable oil cooking spray. Insert the craft sticks halfway into the stem-ends of the apples.

In a medium, heavy saucepan, over low heat, combine the caramel candies and orange juice. Cook, stirring occasionally, until the candies have melted and the mixture is smooth, about 10 minutes. Set aside to cool for 2 minutes. Dip the apples in the caramel until coated and put them on the parchment paper until firm, about 2 hours.

Put the chocolate in a medium bowl and set it over a pan of barely simmering water. Stir until the chocolate is smooth and melted. Using a fork, drizzle the melted chocolate over the caramel. Put the apples back on the parchment paper for 10 minutes. Sprinkle with small candies, chopped nuts or sprinkles and allow the chocolate to harden, at room temperature, for about 3 to 4 hours.
